Our History:

MamaQuilla is born from our road trips across Latin America and our passion for its flavors. MamaQuilla is the “choripan” when leaving “La Bombonera,” the taco in the streets of Tijuana that makes people cross the USA border for dinner, the “paisa” platter on local wet markets of Bogotá and the “hayacas” every 25th of December in Caracas. The color of Peruvian chilies painting the streets of Lima, and the passion fruit smell of the streets of Rio de Janeiro. The spiciness of a Clamatito juice in Chihuahua, the complexity of Guatemalan rum, the sourness and foam of Fernet and Coke on the streets of Rosario, and the citrus of freshly squeezed lime of a Daiquiri in La Habana. The origin is rooted in the Inca Goddess, who resurrects with all her power and travels by the hand of the sun, discovering every corner of those lands, which speaks with their colors, smells, and flavors. MamaQuilla is a tribute to the roots, to that slow cooking, full of love and care cuisine that tells the history behind its culture in every bite.

We break rules before we write them. We have an adventurous soul. We like to swim in madness and drink it whole.

CO-FOUNDERS

Behind MamaQuilla are Luis Diez, Dachi Cortés y Nacho López. Three lives dedicated to hospitality, from the roots of business management and concept creation, tightly connected with people’s development and company culture, business optimization, and guest experience. On their CVs, restaurants and clubs such as Cala Bassa beach Club or Lio in Ibiza, Shoko in Barcelona, La Finca and Gaucho in London, Ramses and Arts Club in Madrid, and Tokyolima and Pici by Pirata Group in Hong Kong. Great expertise that is now all focused on their most personal project: MamaQuilla.
